A dessert that defies gravity. This Classic Chocolate Soufflé is warm, incredibly rich, and lighter than air. With its dramatic, sky-high crown and a deeply chocolatey center that melts on your tongue, this is the ultimate elegant comfort food that proves you don’t need a culinary degree to create kitchen magic.

  • Total Time: 40 mins

Ingredients

For the Base:

  • 2 tbsp All-purpose flour
  • 1/4 tsp Salt
  • 2 tbsp Sugar
  • 1/2 cup Fresh milk
  • 2 tbsp Butter
  • 1 cup Grated chocolate (high quality)

For the Meringue:

  • 4 Egg yolks (room temperature)
  • 1 tsp Vanilla extract
  • 4 Egg whites (room temperature)
  • 1/2 tsp Cream of tartar
  • 2 tbsp Sugar

For the Ramekins:

  • Softened butter (for greasing)
  • Granulated sugar (for coating)

Instructions

  1. Prep: Preheat oven to 190°C (375°F). Generously butter the inside of 4 ramekins and coat them completely with granulated sugar, tapping out the excess.
  2. Make the Base: In a saucepan over medium heat, whisk together the flour, salt, 2 tbsp sugar, and milk. Whisk continuously until the mixture forms a thick paste. Add the butter and stir until smooth and fully combined.
  3. Add Chocolate: Remove from heat and stir in the grated chocolate. Let sit for 2-3 minutes to gently melt, then stir until smooth.
  4. Add Yolks: Transfer the warm chocolate mixture to a large bowl. Whisk in the egg yolks and vanilla extract until smooth. Set aside.
  5. Whip Meringue: In a clean glass or metal bowl, beat the egg whites and cream of tartar until frothy. Gradually add the remaining 2 tbsp of sugar. Beat until the whites double in volume, become glossy, and form stiff peaks.
  6. Fold: Stir one scoop of the egg whites into the chocolate mixture to lighten it. Gently fold in the remaining egg whites in two batches using a spatula. Do not overmix; fold just until combined.
  7. Bake: Pour the batter into the prepared ramekins. Bake for 15 to 20 minutes without opening the oven door.
  8. Serve: Serve immediately straight from the oven before they deflate!

Notes

  • The “Top Hat” Trick: Right before baking, take your thumb and run it along the inside rim of the filled ramekin, creating a small groove between the batter and the dish. This forces the soufflé to rise perfectly straight up in the center, giving it that professional “top hat” look!

  • Squeaky Clean Bowls: When whipping egg whites, even a microscopic drop of grease or water in your bowl will prevent them from whipping up. Wipe your mixing bowl and beaters with a little white vinegar or lemon juice beforehand to ensure they are pristine.

  • Make Ahead Magic: You can prepare the base and fold the egg whites up to 2 hours before your guests arrive! Just fill the ramekins, cover them gently, and leave them on the counter (not the fridge) until you are ready to pop them in the oven.
