The chocolate cake from Matilda has always been one dessert I wanted to try making badly. It looked so rich & covered in thick chocolate frosting that I could never forget. I decided to make my own version at home and honestly to say, it turned out even better than I expected.
The cake is soft, moist and full of rich chocolate flavor. Every bite melts in your mouth, and the smooth fudgy frosting on the top make it even more incredible. I love that deep chocolate taste without the frosting being too sweet, which makes it very easy to go back for another slice.
It may look complicated but it is easier to make than you think. You don’t need a fancy skill or complicated ingredients. Once you spread that thick, glossy chocolate frosting over the cake, it really looks like the cake we all remember from Matilda. I make this cake when I want something special but don’t want to spend hours decorating. It’s perfect for birthdays , family gatherings, weekend baking or even a cozy movie night . Nothing feels better than having a big chocolate cake sitting on the table, just waiting to be sliced.
And if you want to make it even more special, have a warm slice with a cold glass of milk or a scoop of vanilla ice cream. The warm, soft chocolate cake with that fudgy frosting and cold ice cream is such a delicious combination. If you love chocolate, this is definitely a cake you’ll want to make again and again. It’s rich, moist, fudgy, and so easy to make. It tastes like the perfect chocolate cake you’d get from a bakery, but you can make it right at home.
Super Moist: The cake comes out really soft and moist, with a nice bakery-style texture.
Rich Chocolate Taste: The cocoa, hot water, and coffee make the chocolate flavor extra rich and delicious.
Fudgy Frosting: The frosting is quick and easy to make. It turns thick, smooth, and fudgy, perfect for spreading on the cake.
Easy to Make You don’t need any fancy tools or decorating skills. Just bake, spread the frosting, and you’re done.
KEY INGREDIANTS & WHY IT MATTERS.
1)Cocoa powder; Use unsweetened cocoa powder to control the sweetness and give the cake its flavor.
2)coffee; Use instant coffee. instant coffee enhances the chocolate flavor. You can leave it out if you prefer.
3)Sour cream & thick curd; These add moisture and help create a tender crumb. Use plain, full-fat yorgurt as an alternative if needed.
4)Dark chocolate; Choose a good quality dark chocolate bar for a smooth, rich frosting.
5)Butter; Unsalted butter gives you better control over the overall flavor.
6)Eggs; Room-temperature eggs combine more easily with the other ingrediants.
COMMON MISTAKES TO AVOID
1)using too much flour: excess flour can make the cake dry & heavy. measure by weight when possible.
2)Overbaking the cake:Baking for too long can remove the moisture.Check the centre with a skewer before fully baking time is over
.
3)Adding frosting to a warm cake; Always allow the cake to cool completely before decorating.
4)Heating the frosting too quickly; High heat can cause the chocolate and butter to seperate. Use low heat and stir continously.
5)Skipping the frosting chilling time; warm & runny frosting will not hold its shape properly. Refrigerate until thick enough to spread.
6)Overmixing the battter; Excessive mixing after combining the wet and dry ingrediants can affect the cakes texture.
7)Cutting the cake too soon; Give the frosting a short time to set before slicing the cleaner portions.
Step 1: Prepare the Chocolate Mixture
In a bowl, mix the cocoa powder and instant coffee with hot water until smooth and lump-free. Add the oil, room-temperature sour cream or thick curd, vanilla, and eggs. Whisk everything until well combined and mixed properly.

Step 2: Prepare the Dry Ingredients
In a big, clean bowl, add the flour, sugar, baking powder, baking soda, and salt. Use a whisk to mix everything well for about a minute so all the dry ingredients are blended nicely and there are no big lumps left.

Step 3: Add the Butter
Add the cold, diced butter to the dry ingredients. Using a hand mixer on low speed, mix for 1–2 minutes, until it looks like fine, damp crumbs. This helps give the cake a soft and tender texture.

Step 4: Make & Bake the Cake
Add the wet mixture to the flour mixture in two additions, mixing on low speed after each one. Mix just until everything comes together — don’t overmix. Pour the batter into the pan and smooth the top. Bake for about 40 minutes, or until a skewer comes out clean or with a few moist crumbs.

Step 6: Make the Fudge Frosting
Add the chopped dark chocolate, butter, condensed milk, icing sugar, salt, and vanilla to a saucepan. Cook over very low heat, stirring until everything is melted and smooth. Don’t let it boil.

Step 7: Strain & Chill the Frosting
Strain the mixture into a bowl to make it extra smooth. Cover it directly with cling wrap so a skin doesn’t form, then pop it in the fridge for 2–3 hours until it gets nice, thick, and easy to spread.

Step 8: Assemble & Serve
Cut the cooled cake into two layers if you like. Spread the fudge frosting between the layers, then cover the top and sides with the remaining frosting. Chill the finished cake for about 15 minutes, then slice and enjoy!

Notes
🧁 How to Store the Cake
1)Cake Without Frosting: Once the cake has cooled completely, wrap it well in plastic wrap. You can keep it at room temperature for up to2 days.
2)Fudge Frosting: Keep the frosting in an airtight container in the fridge for up to1 week. Let it come to room temperature and give it a quick stir before using.
3)Finished Cake: Keep the frosted cake in an airtight container. It can stay at room temperature for up to2 days, or in the fridge for up to4 days.
4)Leftover Slices: If you keep the cake in the fridge, take it out about15–20 minutes before eating. This lets the cake soften and the frosting become nice and creamy again.
- Prep Time: 20 min
- Chill time: 3 hours
- Cook Time: 40 min
- Method: Baking
- Don’t Skip the Cocoa Blooming: Mix the cocoa with hot water. This brings out a much richer chocolate flavor.
- Use Room-Temperature Ingredients: Let the eggs and sour cream come to room temperature before using them. This helps everything mix together smoothly.
- Measure the Flour Carefully: If possible, use a kitchen scale. Too much flour can make the cake dry and less soft.
- Keep the Heat Low: When making the frosting, cook it on very low heat and keep stirring. This helps keep it smooth and glossy.
- Cover the Frosting: When chilling the frosting, press plastic wrap directly onto the surface. This stops a hard layer from forming.
- If the Frosting Gets Too Hard: Just leave it at room temperature for about 15–20 minutes. It will soften and become easier to spread.
- For Clean Slices: Use a sharp knife dipped in hot water. Wipe it dry before each cut for nice, clean slices.
