They are popular in bakeries, at family gatherings etc . They are usually served warm as a delicious street food or a simple homemade treat.
I always loved how these golden triangle pack so much comfort into every single bite . The best part is biting into the soft , fluffy dough and finding a warm , juicy filling of spiced chicken , crunchy bell peppers, creamy sauce inside.its rich , tasty and so satisfying.
What I love the most about making fatayer at home is that it’s actually fun to make . Rolling the dough , adding the filling , and shaping each one into a triangle feels almost relaxing . It’s also a great recipe to make with family or friends . Everyone’s can help fill and shape the dough, and then we all wait for them to come out of the oven , golden and delicious.
At first , I was worried that making the yeast dough would be difficult or that filling might leak out and make the pastry soggy . But after learning a few simple tricks , it’s became much easier to easier. I found that letting the filling cool before using it helps keep the dough nice and soft . Adding a little butter at the end of kneading also makes the dough smooth, soft , and tender.
That’s what I love about this recipe .you can make soft , fluffy , bakery-style chicken fatayer right at home and they taste even better when they are fresh from the oven.
Soft and Tender Dough: The butter, milk, and egg make the dough soft, rich, and tender. It stays fluffy without becoming dry.
Juicy and Tasty Filling: The chicken is cooked with spices, colorful bell peppers, tomato sauce, and mayonnaise, making the filling juicy and full of flavor.
Easy to Shape: Letting the dough rest before rolling makes it much easier to work with. A good pinch around the edges keeps the filling safely inside.
Perfect to Make Ahead: These fatayer can be baked, frozen, and reheated easily. They’re great for parties, afternoon tea, or a quick lunch.

Key ingredients & why they matters.
1. Lukewarm Milk & Butter:
Use milk that is warm but not too hot, so it helps the yeast work properly. Adding soft butter at the end makes the dough smooth, soft, and easy to work with.
2. Instant Yeast & Sugar:
mix the yeast with sugar and warm milk first. The sugar helps the yeast activate, which gives the dough a nice, light, and fluffy texture.
3. Finely Chopped Chicken:
Always cut the chicken into small pieces. They cook quickly and stay juicy, and the small pieces are much easier to fit inside the dough without tearing it.
4. Bell Peppers & Spices:
Red and yellow bell peppers add a little crunch and sweetness to the filling. Oregano, chilli flakes, and a little cinnamon bring everything together and give the chicken a lovely flavor.
5. Tomato Sauce & Mayonnaise:
Add these after taking the chicken off the heat. The tomato sauce gives the filling a little tang, while the mayonnaise keeps it creamy and juicy.
6. Egg Wash & Black Sesame Seeds:
Before baking, brush the fatayer with a little beaten egg. This gives them a beautiful golden color. I also sprinkle some black sesame seeds on top for a nice finish and a little extra flavor.
Step 1. Activate the Yeast (5–10 minutes)
In a cup or small bowl, whisk together the lukewarm milk, sugar, and instant yeast. Let it sit undisturbed in a warm spot until it grows frothy and foamy on top.

Step 2. Prepare the Dough (10–12 minutes)
In a large mixing bowl, whisk together the all-purpose flour and salt. Pour in the foamy yeast mixture and the egg, then gradually mix in the room-temperature water until a soft, slightly sticky dough comes together. Add the softened butter and knead the dough on a lightly floured surface for 8 to 10 minutes until it turns smooth, glossy, and elastic.

Step 3. First Rise (1–1½ hours)
Shape the kneaded dough into a ball and place it in a lightly greased bowl. Cover with a clean kitchen towel or plastic wrap and leave it in a warm, draft-free spot for 1 to 1.5 hours, or until doubled in bulk.

Step 4. Cook the Chicken Filling
Heat 2 tbsp oil in a pan over medium heat. Add the finely chopped chicken and cook until fully done and lightly browned. Add the chopped onion and minced garlic, sautéing until softened. Stir in the salt, chilli powder, chilli flakes, oregano, turmeric, mixed herbs, and cinnamon powder, cooking for 1 minute until aromatic. Toss in the red and yellow bell peppers and cook for 2–3 minutes until slightly tender. Remove from heat, stir in the tomato sauce and mayonnaise, and let the mixture cool completely before using.

Step 5. Divide & Rest the Dough
Gently punch down the risen dough to release air bubbles. Divide into 10 equal portions (about 80g each) and roll them into smooth balls. Cover with a damp cloth and let rest for 10–15 minutes so the gluten relaxes, making the dough easy to shape.

Step 6. Shape the Fatayer
On a lightly floured surface, roll each dough ball into a thin circle. Place 2 to 3 tablespoons of the cooled filling directly into the center. Lift three sides toward the middle and pinch the edges together firmly to form a neat, three-cornered triangle, ensuring the seams are tightly sealed.

Step 7. Final Proof
Arrange the assembled fatayer onto a parchment-lined baking sheet. Cover loosely with a cloth and let them proof for 20 to 30 minutes until noticeably puffy and light.
Step 8. Bake to Perfection (18–25 minutes)
Preheat your oven to 180°C. Brush the tops of each fatayer with beaten egg wash and sprinkle generously with black sesame seeds. Bake for 18 to 25 minutes until the crust is deep golden brown and cooked through. Serve warm!

- Method: Baking
Cool the Filling First:
Make sure the chicken filling is completely cool before adding it to the dough. Warm filling can make the dough soft and difficult to seal.
Pinch the Edges Well:
When shaping the triangles, press the edges together firmly so the filling stays safely inside while baking.
Don’t Overfill:
Try not to add too much filling. About 2–3 tablespoons is enough for each one and makes them much easier to close.
Keep the Edges Clean:
Make sure the edges of the dough stay free from sauce, oil, or mayonnaise. If the edges get greasy, they won’t seal properly.
Let the Dough Rest:
After dividing the dough into balls, let them rest for about 10–15 minutes. This makes the dough softer and easier to roll.
Keep the Dough Covered:
Always cover the dough balls and shaped fatayer with a clean, damp towel while you work. This stops the dough from drying out.
Use Lukewarm Milk:
The milk should feel warm, but not hot. Milk that is too hot can affect the yeast, while cold milk may take longer to activate it.
Use Parchment Paper:
Line your baking tray with parchment paper so the fatayer don’t stick and the bottoms bake nicely and evenly.
