★★★★★

This Authentic Beef Pad Kra Pao is one of Thailand’s 🇹🇭 most popular street-food dishes. It is a simple and flavorful stir-fry made with tender beef, garlic, bird’s eye chilies, and fresh holy basil. I quickly cook the beef in a hot wok, then coat it in a rich, savory sauce made with soy sauce, oyster sauce, and fish sauce. The best part is that I can have this dish ready in just about 15 minutes, making it perfect for a busy day when I still want to enjoy authentic Thai street-food flavor at home.

This is one of our family’s favorite meals. We make it at home at least once every two weeks, and it is always a hit. Everyone loves the spicy, savory flavor, especially when I serve the beef over a warm bowl of steamed rice. It is simple, filling, and full of flavor.

The secret to this dish is cooking everything quickly in a hot wok. The beef gets a beautiful sear while the garlic and chilies release their amazing aroma. The sauces then cook down into a rich, slightly sticky glaze that coats every piece of beef.

I add fresh holy basil at the end, which gives the dish its classic Thai flavor and a lovely peppery fragrance. If you enjoy spicy food, add more bird’s eye chilies to make it even hotter.

The best part is how quickly this meal comes together. In about 15 minutes, you can have a delicious Thai-inspired dinner on the table. It is perfect for a busy weeknight or whenever you are craving Thai food at home.

And when the garlic and chilies hit the hot oil, that amazing aroma will have everyone asking, “Is dinner ready yet?”

The Secret to the Best Authentic Pad Kra Pao

For me, making a really good Pad Kra Pao comes down to two things: high heat and fresh aromatics.

I always start by roughly crushing the garlic and bird’s eye chilies together in a mortar and pestle. You can mince them if you prefer, but crushing them helps release their natural oils and gives the dish a much stronger aroma.

Next, I get my wok really hot before adding the beef. I let the beef cook against them hot surface for a moment so it develops a nice, golden-brown sear. Then I toss it quickly to cook everything evenly.

Once the beef starts to brown, I push it to one side and add the crushed garlic and chilies directly to the hot oil. They cook quickly and release an amazing fragrance without losing their fresh flavor.

For the sauce, I mix dark soy sauce, light soy sauce, oyster sauce, fish sauce, and a little sugar. I add it around the hot wok so it bubbles and reduces quickly, giving the beef a rich, flavorful glaze instead of a watery sauce.

Finally, I turn off the heat and add the fresh holy basil. The leftover heat gently wilts the leaves while keeping their beautiful aroma.

Serve it immediately with steamed jasmine rice and a crispy fried egg, and you have a delicious Thai-style meal ready in under 15 minutes.

1. Prepare the Aromatic Base

Start by roughly crushing the bird’s eye chilies and garlic together in a mortar and pestle. Keep  them slightly coarse because this helps release their aroma and gives the dish more flavor. If you don’t have a mortar and pestle, you can finely chop them with a knife.

“This spicy garlic and chili mixture is what gives Pad Kra Pao its amazing aroma and heat.”

2. Combine the Stir Fry Sauce

Mix the oyster sauce, light soy sauce, dark soy sauce, fish sauce, sugar, and water in a small bowl. Then give everything a good stir until the sugar dissolves and the sauces combine well.

“I always prepare the sauce before I heat the wok because everything cooks very quickly once I start.”

3. Sear the Beef

Heat 2 tablespoons of cooking oil in a wok over high heat. Once the oil gets hot, then add the thinly sliced beef and stir fry it for about 2–3 minutes.

Spread the beef out and leave it alone for a few seconds instead of stirring constantly. This gives the beef a nice sear and helps the edges turn beautifully golden and flavorful.

My tip: Don’t keep stirring the beef as soon as you add it to the wok. Give it a little time to sear first—it makes a big difference in the flavor.

4. Infuse the Thai Flavors

Push  the seared beef to one side of the wok and add 1 tbsp of oil to the empty side. Then add the crushed garlic and chili mixture and stir fry it for a few seconds.

Once the garlic and chilies become fragrant, quickly toss everything together with the beef. Make sure not to cook the garlic for too long because it can burn easily.

My tip: This is my favorite part because the garlic and chilies hit the hot oil and the whole kitchen starts smelling like Thai street food.

5. Glaze with the Sauce

Pour  the prepared sauce around the sides of the hot wok and then quickly toss it with the beef. The high heat helps the sauce bubble and cook down quickly.

let it simmer for a few seconds until it thickens slightly and coats the beef with a glossy, flavorful glaze. I always love this part because the sauce clings to every piece of beef and makes the dish look so delicious.

6. Finish with Holy Basil

Turn off the heat and add a  handful of fresh holy basil leaves. Then give everything a quick mix and let the remaining heat from the wok wilt the basil slightly.

I love adding the basil at the very end because it keeps its fresh, peppery aroma and gives the Pad Kra Pao that classic Thai flavor.

My tip: Turn off the heat, add the basil, give it a quick toss, and you’re done!

7. Serve Immediately

Serve Pad Kra Pao immediately in a warm bowl of steamed jasmine rice. For the full Thai street food experience, Top it with a crispy fried egg with a soft, runny yolk.

When I break the crispy egg yolk over the spicy beef and rice, all the flavors come together so well. It’s honestly one of my favorite ways to enjoy Pad Kra Pao!

🌶️ Special Notice — This Recipe Brings the Heat

This Pad Kra Pao is quite spicy because I use 2 tablespoons of bird’s eye chilies. If you love spicy food, you can keep the full amount. If you prefer a milder taste, reduce the chilies to your liking.

When I make this for children or anyone who doesn’t eat much spice, I use fewer chilies and remove the seeds before crushing them. It’s much easier to add more heat later than to take it away once the chilies cook in the oil.

Since this is a spicy meal, I love serving it with something sweet and refreshing afterward. A chilled slice of chocolate tres leches cake or creamy caramel pudding makes a delicious dessert. If you’re making a bigger spread, chicken fatayer also goes really well as an appetizer.

Frequently Asked Questions

Can I use ground beef instead of sliced beef for Pad Kra Pao?
Yes! You can use ground beef, chicken, or pork. Brown the meat in the hot wok and cook it until fully done.
I can’t find holy basil. What can I use instead?
Holy basil gives Pad Kra Pao its traditional flavor, but Thai sweet basil makes a great substitute. You can also use Italian basil if you can’t find either one, although the flavor will be slightly different.
How can I make Thai basil beef less spicy?
Use fewer bird’s eye chilies. You can reduce 2 tablespoons to just 1–2 chilies. For even less heat, remove the seeds and ribs before crushing them.
Do I need a wok to make this recipe?
No. A large, heavy skillet or cast-iron pan works well too. Just heat the pan properly before adding the beef.
Why does the sauce contain sugar?
Thai cooking balances salty, sweet, spicy, and sour flavors. A small amount of sugar balances the heat from the chilies and the saltiness of the soy and fish sauces without making the dish taste sweet.
