What Is Es Mambo & The Story Behind the Flavor?
Es Mambo is a popular Indonesian frozen treat made with milk, coconut milk, or fruit juice. People pour the sweet mixture into small, narrow plastic bags and freeze them until firm. You can find Es Mambo in many flavors, including chocolate, fruit, and sweet milk.
For my Creamy Es Mambo, I wanted more than just frozen flavored milk. I wanted a smooth, creamy texture with plenty of flavor in every bite.
The secret starts with a simple cornstarch and full fat milk mixture. Cooking them together creates a smooth, thick base that helps keep the icy poles creamy instead of icy. Once the mixture cools down , I divide it into portions and add different flavors to it . The result is a texture that feels almost like a thick milkshake.
For the flavors, I use sweet Alphonso mango, creamy avocado, and tangy sweet wood apple. I also add rose syrup to one portion for a light floral flavor.
Before filling the bags, I drizzle melted white chocolate inside and swirl it around. Once frozen, the chocolate creates a pretty marble effect and adds a little crunch when you bite into it.

1. Start with the Creamy Base
First, let’s make the creamy base that gives these Es Mambo their lovely smooth texture. Mix the cornstarch with 800 ml of full-fat milk in a saucepan, then cook it over medium heat while stirring constantly.
Keep stirring until the mixture becomes thick, smooth, and glossy. Once it reaches that consistency, take it off the heat and pour it into a bowl or container. Let it cool completely before moving on to the next step.

2. Divide the Base
Once the mixture has cooled completely, divide it into four equal portions of about 200 g each. This makes it easier to turn each portion into a different flavor.

3. Make the Avocado Flavor
For the avocado flavor, add 200 g of the cooled cornstarch mixture, 500 ml of full-fat milk, 200 g of sweetened condensed milk, and 150 g of avocado purée to a blender.
Blend everything until smooth and creamy. Pour the mixture into a bowl and set it aside while you make the other flavors.

4. Make the Mango Flavor
For the mango version, blend another 200 g of the cooled cornstarch mixture with 500 ml of full-fat milk, 200 g of sweetened condensed milk, and 200 g of mango purée.
Blend until the mixture looks completely smooth and creamy. The ripe mango gives this one such a lovely fruity flavor and natural sweetness.

5. Make the Wood Apple Flavor
Next comes my tangy wood apple flavor. Add 200 g of the cooled cornstarch mixture, 500 ml of full-fat milk, 200 g of sweetened condensed milk, and 200 g of wood apple purée to the blender.
Blend until smooth and creamy. I strain the wood apple pulp before using it, so the mixture stays nice and smooth without any seeds or tough fibers.

6. Make the Rose Flavor
For the last flavor, blend 200 g of the cooled cornstarch mixture with 500 ml of full-fat milk, 200 g of sweetened condensed milk, and your measured amount of rose syrup.
Blend everything together until smooth. The rose syrup gives this version a beautiful color and a delicate floral flavor.

7. Add the White Chocolate Swirls
Now for the fun part! Melt the white chocolate gently and keep it smooth and pourable.
Take an empty narrow Es Mambo packet and add a small amount of melted white chocolate inside. Hold the packet and move it upward with your fingers, letting the chocolate spread along the inside walls. Don’t add too much—you only need a thin layer to create those pretty marble-like streaks.
Repeat with the remaining packets.

8. Fill the Packets
Place a funnel into each packet and pour in your chosen flavor. I usually add about 60–65 ml to each one, leaving enough space at the top to seal it properly.
Give the packet a gentle tap to bring any excess air to the top, then twist the empty part tightly.

9. Tie the Packets
To make these easier to open later, I use a simple quick-release knot. Tie one end of a strong string to something sturdy, then hold the twisted neck of the packet and wrap the free end of the string around it. Pull it tight to secure the knot.
Slide the packet off the string and give it a quick check to make sure it doesn’t leak.

10. Freeze Until Firm
Lay the filled packets flat in the freezer and freeze them for 8–12 hours, or preferably overnight, until they are completely firm.
Once frozen, keep them in the freezer until you’re ready to enjoy them.

🧊 SPECIAL NOTICE — TEXTURE & SWEETNESS
Before filling the packets, give your blended mixture a quick taste. It should taste a little sweeter than you want the finished icy pole to taste, because freezing can make sweetness seem less noticeable.
Once you’ve adjusted the sweetness, fill and seal the packets right away. This helps keep the mixture smooth and creamy when it freezes.

Notes
A Few Extra Notes
You don’t have to stick to the fruits I used. Try whatever is fresh and in season. Jackfruit and strawberry would both work beautifully with this creamy base. You can also keep things simple with classic sweet milk or chocolate flavors.
Once you get comfortable with the quick-release knot, you’ll find that preparing a whole batch becomes much quicker.
And one last thing keep your Es Mambo frozen solid until you’re ready to serve them. That’s the best way to keep them creamy, firm, and delicious.
Tips & Tricks at a Glance
🥛Check the texture first. Before filling the packets, make sure your mixture looks thick and creamy, almost like a milkshake.
🍫Go easy on the white chocolate. A thin layer is all you need to get those pretty swirls inside the packet.
🥄Have a little taste. I always taste the mixture before filling the packets and adjust the sweetness if needed. Remember, it can taste a little less sweet once it freezes.
🥭Use really ripe fruit. The sweeter and more fragrant your fruit is, the more delicious your Es Mambo will taste.
🪢Practice the knot first. If the quick-release knot feels tricky, try it on an empty packet before you start filling. Once you get the hang of it, it becomes much easier.
🕒Give them enough time to freeze. I usually freeze them for at least 8 hours, or just leave them overnight. Make sure they are completely solid before serving.
Tips & Tricks for Perfect Es Mambo
1. Let the base cool completely
Don’t blend the cornstarch mixture while it’s still hot. Let it cool completely first so the fresh fruit keeps its natural flavor.
2. Prepare the fruit first
I like to blend and measure each fruit purée before adding it to the milk mixture. This makes it much easier to get the right amount of fruit in every flavor.
3. Keep the chocolate layer thin
You only need a little melted white chocolate to create those pretty swirls. If you add too much, it will take up space inside the packet and make it harder to fill.
4. Get the knot right
The quick release knot might take a little practice, but once you get the hang of it, it makes filling and sealing the packets much easier. It also gives you a neat, secure seal that’s easy to open when you’re ready to enjoy them.
5. Taste your wood apple
Wood apple can taste from mildly sweet to quite sour. Give your pulp a taste before adding it to the mixture. If it’s too sour, mix in a little sugar before measuring it out.
6. Freeze the packets flat
Lay the filled packets flat in the freezer. This can help them freeze evenly and keeps the chocolate swirls nicely spread throughout the icy poles.
